Back in the Groove

I feel like we kinda had to "re-enter" our Pennsylvania life after being back in Arkansas for such a long time. It just took a bit longer than expected to get back in our groove. This was a fun, relaxing weekend with just enough busyness ... It was good.
Saturday Danny and Aaron umpired the church softball league's Championship Playoffs. The kids and I had fun going out to the ball field and mingling with the other families cheering on their team. There were lots of kids and lots of Popsicles, so my kids were happy campers.
That evening we got to go to the Wesleyan church's (where I think we've finally decided will be our church home for our Pennsylvania stay!) softball-end-of-the-year bonfire. It was a great time. Their church group has been incredibly welcoming and is filled with so many sweet people. I am loving getting to know the women, they are such a great group.
At the bonfire we roasted hot dogs and s'mores, the kids played in the creek and ran all over the Gorsline's BEAUTIFUL property, I indulged in my first "mountain pie," and everyone just enjoyed the cool night. It was so strange to be sitting outside in mid-July crowded around a fire because there was a chill in the air ... Definitely not something I've experienced in Arkansas!!
While Emily and I were sitting by the fire snuggling babies and snacking on mountain pies we got tickled. She said, "do you ever just sit and think, how did we get here? Like how am I all the sudden friends with Rebekah Boone and living in Pennsylvania? We laughed. And laughed. And laughed some more. Being here has been such a big lesson on how insignificant my plans are, and how big God is. We aren't promised tomorrow, we don't know what the future will hold, all we can do is put our trust in Him and believe He has good for us. And I do.


















I have an itsy bitsy crush on Isaiah Knox ... And he knows it.



We had sucha fun night! Dalton has not stopped asking to go back! Thanks Wesleyans for including us!

Today we had a restful day and then got to go on a date with the Knox's. They were SUPER sweet to take us out for Aaron's birthday. Our options were kinda limited after our Sunday night dinner since most everything was closed. Somehow we ended up at the Tioga Down's casino. It was a sight to behold. I do think we'll bring the kids back soon when they're racing ... Dalton Boone would love that.

Halfway to 66: Happy Birthday Aaron!

AaronBoone is da' bomb. No, really.
He makes me laugh multiple times a day. He is a rock star daddy. He goes above and beyond for his family all. the. time. And, I just love him.
I still remember him walking into the restaurant where I was waiting tables in college. It was after the lunch rush and he and his friend were the only two in there. I thought he was THE hottest guy I'd ever seen and even told one of my friends I was working with that I was going to marry him (a little premature ... But, I'm nothing if not impulsive). I'm pretty sure it was love at first sight. Thank GOODNESS for the drug-head waitress that overheard me saying that and passed the info that I thought he was a cutie on to him. Clearly, a fairy tale romance from the start.
But 7 years later I'm so happy that he's mine!!

We don't really do a big to-do for parent birthdays around here. We usually individually treat ourselves with something we've been eyeing, but Aaron didn't even do that this year. Instead he took Avery, Dalton and Trip to see Brave today and then took THEM to all get happies. He even brought me home some cute running shorts ... On HIS birthday.
Aaron's not one to want a fuss ... Actually the first year we were married I did a surprise thing at our house with family and friends and he hated it; he is just not one for being the center of attention. But, because I have to make somewhat of a big deal about the man in our house I just want to proclaim, "AaronBoone, you are loved! And I think you're the greatest evah. Love you oodles!

We did a fun fishy dinner and then went out for ice cream. I think he had a good day.

Mmm Mmm Monday

While we were in Arkansas Aaron was up here watching wayyyyy too many Netflix documentaries on nutrition: Food Inc, Forks Over Knives, Food Matters ... and probably a dozen more. He was super serious about us changing up our diets and all but becoming like that girl on Notting Hill who thought any vegetables plucked from the earth had been murdered ... I'm not kidding. The man loves a cause.
After a couple "debates," we met in the middle and walked into Wegmans ready to get our healthy on. As I'm getting in the hang of our new lifestyle of mainly plant-based, whole food menu I'm planning to chart our discoveries (Or our more likely would be our failures and quick return to Paula Deen and The Pioneer Woman). But HOPEFULLY it will be a mix of the two: making healthy food yummy!

I love cooking. I'm one of those people that plans out a weekly menu and usually at least half of those are Pinterest finds that I've never made before. My kids are used to my culinary adventures and will eat most anything, bless their sweet hearts. However, even I was shocked when they gobbled up Aaron's southwestern salmon he cooked last night. Maybe this will be easier than I thought!
I'm not really sure what this will look like weekly at this point, but on Mondays I'll try to post at least one recipe ... In a perfect world that will be healthy family faves, but probably a couple slip-ups as well ... Like today. Clearly, I'm off to a good start.

Tonight's Menu is pretty easy- one of the great things about healthy food is that it's usually easy to make since it seems you're not coating the food in lots of unhealthy stuff.

First up: Baked Tilapia.
This recipe is so easy, so yummy, and only takes a few minutes to pull together.
I'm pretty sure if you've ever made tilapia (or most other white fish) then you've probably made the same thing ... But I'll share my fav way, just in case.
All you need is:
4 Tilapia Fillets
2 tbs butter
1 tbs of minced garlic
A pinch of dill
A dash of salt and pepper
A dash of paprika
Juice of half a lemon

To prepare:
Preheat oven to 350.
Over low heat melt your butter and then add in the rest of your ingredients (except the tilapia).
Once it begins to simmer you can pour a bit of the sauce in the bottom of a shallow baking pan. Then place the fillets in the pan as well and pour the rest of the sauce over the fish. Bake at 350 for 12-15 minutes. It will be done when it flakes easily with a fork.
Easy Peasy!

Next on the list: Kale Salad
Kale is all over the documentaries we've watched as a super-food. So I see it being a main staple to our diets. The vitamins and minerals packed inside are unbelievable.
This is such an easy way to fix it without losing any of the goodness it's known for.

All you need is:
Kale: rinsed and chopped
1 large Avocado: mashed
Juice of half a lemon
Dash of kosher salt

To prepare:
Just mix together the avocado and lemon juice and then toss it with the kale. Throw in a dash of salt and serve. It really is super yummy!

Okay, so last on my list is one of the yummiest things I've made in a while... Definitely not part of the healthy eating plan ... But it does have bananas. Sooo ... Yeah, there's that. I saw this on Pinterest yesterday and couldn't get it out of my head until I eventually ran to Wal-Mart to get the fixins.

Last but not least: Chocolate Chip Banana Cake with Peanut Butter Frosting

To make the layered cake you have to double this recipe, which is what I did. The recipe that follows is just one 8 inch round cake ... But next time I'm doing it in cupcake form ... You'll see why.

Here's what you need:
For the cake-
1 yellow cake mix
3/4 c water
1/3 c oil
3 eggs
1 c mashed bananas
1/4 tsp baking soda
1 tsp cinnamon
1 c of mini chocolate chips

For the frosting-
1 c butter, softened
1/2 c peanut butter
4 tbsp water
3 tbsp of honey
1 tsp vanilla
1/8 tsp salt
4 c of powdered sugar

To prepare:
For the cake-
Add in the cake mix, baking soda, cinnamon, eggs,water and oil and beat on low for one minute. Increase mixer speed and beat for two more minutes. Stir in the chocolate chips and bananas by hand.
Grease and flour an 8 in cake pan and fill with batter. Bake at 350 for about 38 minutes. Cool in the pan for ten minutes before letting cool on a wire rack. Frost.

For the frosting-
Cream butter and peanut butter. Add in 2 tbsp water, salt, vanilla and cream again. Slowly add in the sugar. After all the sugar is added, add in another 1-2tbsp water.
Beat in the honey until creamy.

Enjoy!

Home Again, Home Again ...

Jiggity Jog.

Tuesday morning we got home from Arkansas after a lonnngggg trip home. Aaron decided about half way home that he wanted to drive it straight through. As in not stop for more than gas, food, or potty breaks on the 19 hour trek. As in, shoot me.
So for 22 hours and seven minutes we were on the open road hauling this beauty:



I'm not really sure how we accumulated so much stuff while we were there, but we did. In my defense, we did bring Trip back to Pennsylvania for Jason, so we had to have the third row up and that did cut down on some cargo space.
The drive was awful ... The kids were just so tired and sick of the car!

After that I was done with pictures, it was not worth remembering.

I have lots of sweet pics to share from the rest of our trip, but I managed to leave my laptop in Arkansas and my mom is mailing it back. Can't wait to share!

Party Pics

My sweet mom decided she just couldn't handle the kids not having a birthday party this year since we're so far away. So, she took it upon herself to throw a mega fun
party for all the kids sweet friends. Avery decided the day after her last birthday she wanted to have a cake decorating party next time ... So she made it happen. Dalton got his wish and had a pony come!
I'll let pics give the rest of the deets ... Thanks for everyone who came and made us feel so loved!! Best friends ever!!
